- 1 liter vegetable oil
- 32 medium shrimp, tail on, peeled and deveined
- 4 ounces (113 grams) pickled jalapenos, cut in slivers
- 16 slices bacon, halved
- 32 toothpicks
Heat the oil in a large frying pan or deep-fryer to 175 degrees Celsius (350 degrees Fahrenheit). Cut the backs of the shrimp almost down to the fronts. Stuff the shrimp with jalapeno slices and then wrap in bacon. Secure the wrap with a toothpick. Cook the shrimp in the oil for 2-3 minutes, or until the bacon is crispy. Drain on a plate and serve. Makes 32 appetizers.
