Brandon and Megan from Health-Bent were sick and tired of Paleo sandwiches made with lettuce leaves which kept breaking…spilling the rest of the ingredients all over their laps. So they decided to flip the script and use deli meat as the wrapper and the lettuce and other crunchy/gooey stuff as the filling. Wrap ’em up in parchment/wax paper and you’ve got a portable, paleo lunch.

Ingredients:

  • sweet/honey ham
  • capicola ham
  • salami
  • tomato, sliced thin
  • banana peppers
  • spinach or other lettuce
  • dried oregano
  • olive oil
  • mayo & mustard

Paleo Nori Rolls

By combining nori sheets with grain-free, Paleo-friendly fillings, Jenn from The Evolution of Jenn  introduced me to my favorite template for making paleo sandwiches. The salty, healthiness of the nori makes them my all-time favorite Paleo sandwich wrapper. Mmmmmm good.

In this recipe, Jenn has crafted a salty, sour, tangy, creamy turkey sandwich…and it’s great. But don’t feel limited to stick with these sandwich fillings. You’re only limited by your imagination.

Ingredients:

  • Roasted turkey breast
  • Raw milk cheddar cheese, about .5 oz
  • Fresh pico de gallo
  • Half sour garlic pickle
  • Thin spread of mayo for binder

Paleo Baked Eggplant Sandwiches

Mike and Margherita from The Iron You are going to have you drooling when you smell their Baked Eggplant paleo sandwiches cooking in your oven. Seriously…you WILL drool.

Ingredients:

  • 1 medium eggplant
  • 3.5 oz / 100 gr provolone cheese (or sharp cheddar), sliced
  • handful of sun-dried tomatoes
  • 1 bunch fresh parsley, chopped
  • 4 tablespoons almond meal
  • 4 tablespoons Parmesan-Reggiano cheese, grated
  • 1 egg
  • 1 tablespoon olive oil
  • 2 teaspoons fine grain sea salt
  • ground pepper to taste

Paleo Sandwich Bread

In the Paleo universe, there are many different people with different POVs about what is “paleo” and what isn’t “paleo”. Some Paleos eat cheese…because they like cheese and don’t really give a damn if someone tries to tell them that they’re breaking the rules.

For those “rulebreakers”, I proudly introduce Paleo Sandwich Bread from Elizabeth @ Guilty Kitchen. Made of almond and coconut flour, Liz’s paleo sandwich bread lets shy and/or newbie Paleos eat sandwiches that look like “normal” sandwiches. And it tastes pretty darn good too.

Ingredients:

  • 3/4 cup soaked almond butter (or other nut)*
  • 6 eggs
  • 2 tbsp honey
  • 1/4 cup coconut oil, melted
  • 1/4 cup golden flax, ground
  • 1/4 cup almond (or other nut) flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
